Pumpkin Oatmeal Chocolate Chip Cookies

These are my go-to cookie. Everyone loves them, they are simple and wholesome and are made in one bowl. Easy clean-up is my friend!

Oat and pumpkin chocolate chip cookies
3 C. Oat flour (I make my own by grinding organic rolled oats in my Vitamix blender)
1/2 C. Coconut Sugar or light brown sugar
1/2 t. Baking powder
1 t. Baking soda
1/2 t.  Salt 
1/4 C. Coconut Oil
1/4 C. Unsweetened Apple Sauce
1/2 C. Pumpkin
1 T. Vanilla extract
1-3 T. Liquid sweetener such as maple syrup, honey or agave. If you like really sweet cookies, use 3 T. 
1 1/3 C. Dairy free chocolate chips
Mix dry first, then wet ingredients in a large bowl. Bake at 350 for about 15 minutes.
